Roast medium-thick slices of sweet potato; spread a little paneer and give it a quick broil. Sprinkle lemon juice, salt and pepper before you serve.
Prepare a quick bread dough (or better still, buy prepared dough). Break into small lemon-sized balls and dip them in olive oil, sea salt and fresh herbs of your choice (for a savoury appetiser) or melted butter and cinnamon sugar (for a sweet mouthful). Place one on top of another in a Bundt pan and bake. Voila! Warm bread straight out of the oven and no worries about slicing.
Got some time? Then make your own creamy hummus with soaked and cooked chickpeas, tahini sauce, olive oil and spices. Add some carrot, sweet pepper and cucumber sticks and you’re good to go!
Are you artistic? Then layer lettuce, sweet peppers, cucumbers, hung curd or paneer mixed with lemon juice, salt and pepper, tomatoes, mangoes, and cilantro in a pretty glass dish for a colourful, healthy, salad that will ease the guilt of that second serving of dessert!
Channel your inner Martha Stewart and adapt one of her recipes to make your own cheese straws. Roll out puff pastry sheets, spread with paneer (or cheese of your choice), sprinkle with salt and pepper or red chili flakes, roll, twist and bake. The variations are only as limited as your imagination.
Want to add an Italian twist to your potluck offering? Cook up some pasta of your choice. Toss with lightly-sautéed corn kernels, fresh grape tomato halves, and grated or crumbled cheese, preferably fresh mozzarella. Drizzle some olive-oil lemon dressing, salt and pepper and garnish with sprigs of cilantro or basil. Carbs never tasted so simple or so good.
