Soup is comfort food, meal, snack, or anything else you want it to be. With people being indoors all the time and their creative cooking energy going through the roof, now might be the best time to try your hand at some of these easy and healthy soup recipes that you can prepare under 20 minutes. 

1. Cream of broccoli soup

Ingredients:

 

Olive oil - 1 tbsp

Onion - 1 medium size (chopped)

Garlic cloves  - 3-4 nos.

Water - 3 cups

Salt - 1 tsp

Black pepper - a pinch

Broccoli - 250 gm (florets)

Butter - 1 tbsp

Refined flour - 1 tbsp

Milk - 300 ml 

Black pepper powder - 1 tsp

Jeera powder - 1 tsp

Garam masala - a pinch

 

How to prepare?

 

On medium heat, set a pan and add oil, onion, and garlic and cook until onions start turning golden.

Now add water and add salt & pepper.

Cover the pan and bring it to a boil.

Now add broccoli florets, mix well and cover the pan and cook for 2-3 minutes.

Take the lid off and check whether the broccolis are cooked or not by slitting one of them.

Let the mixture cool down and then grind it into a fine puree.

In another pan, heat butter on medium flame, add flour and mix well, then add salt and cook for 2 minutes.

Slowly add milk to the butter and flour mixture and keep stirring to ensure there are no lumps.

Now add the broccoli mixture and mix well.

Add black pepper and jeera powder and keep cooking on medium heat.

Bring it to a simmer and add salt and garam masala to taste.

Your broccoli soup is ready. Garnish it with fresh cream and some pepper powder. Serve hot.

2. Kidney Beans and Pasta soup

Ingredients:

 

Boiled pasta - 1 cup

Pre-boiled kidney beans - ½ cup

Capsicum - 1 cup (diced)

Blanched beans - ½ cup (diced)

Boiled potato - 1 no.  (diced)

Pre-boiled carrot - 1 no. (diced)

Tamarind puree - 1 tsp

Tomato puree - 2 tsp

Olive oil - 1 tbsp

Saunf powder - 1 tsp

Dhania powder - 1 tsp

Heeng - ¼ tsp

Salt

 

How to prepare?

 

In a pan, heat olive oil and add heeng, saunf powder and heat for a few seconds.

Then add capsicum, potato, carrots, boiled pasta, pre-boiled kidney beans, tamarind sauce, and tomato sauce, now mix well.

Now add salt & pepper to taste and mix.

Add some water and sprinkle mint leaves.

Bring the mixture to a boil and cook for 5 minutes

Serve hot.

3. Vegetable paneer soup

Ingredients: 

 

Paneer - 200 gms

Carrot - 250 gms (chopped)

Mushrooms - 150 gms (diced)

Ginger - 1 tbsp (minced)

Onions - ½ cup (chopped)

Olive oil - 1-2 tsp

Soy sauce - 1 tsp

Pepper powder - 1 tsp

Mint leaves

Salt

Green Chillies - 1-2 nos. (diced)

 

How to prepare?

 

In a pan, heat olive oil for a few seconds and add the chopped paneer and fry it well.

In another pan, add nearly 500 ml water and heat it up.

Now add ginger, onion, carrot, green chilli, mushroom, salt, pepper powder, soy sauce, and fried paneer and mix well.

Now add mint leaves and cook for minutes. 

Your soup is ready, serve hot.

4. Vegetable thai noodles soup

Ingredients: 

 

Oil - ½ tbsp

Garlic - ½ tbsp (minced)

Ginger - 7-8 slices

Spring onion (white part) - 3-4 nos. (chopped)

Thai curry paste (yellow or massaman) - ½ tbsp

Baby corn - ½ cup

Carrot - ½ cup (julienned) 

Spinach - ¾ cup (chopped)

Coconut milk - 200 ml

Water - ½ cup

Soya sauce - 1 tsp

Vinegar - 1 tsp

Brown sugar - 1 tsp

Salt - 1 tsp

Noodles - 70 gms (preferably egg noodles)

Toasted peanut (crushed)

Toasted sesame seeds

Coriander leaves

Lemon wedges - 2 nos.

 

How to prepare?

 

In a pan, heat the oil for a few seconds and add garlic, ginger, and spring onions and fry them.

Now add curry paste and stir it well.

Add the carrots and baby corn and keep cooking for 2 minutes

Now add coconut milk, water and the noodles and spinach.

Cook the noodles in this broth for a few minutes. Add water if required.

Now add soya sauce, brown sugar, vinegar, and salt and cook for 3-4 minutes.

Your soup is ready, garnish with peanuts, sesame seeds, and coriander leaves.

Serve hot.

5. Salsa bean soup

Ingredients: 

 

Soaked and boiled rajma - 1 cup

Vegetable stock - 3 cups

Spring onions (green part) - 1-2 pieces (chopped)

Small onions - 3-4 pieces (chopped)

Tomatoes - 1 cup (chopped)

Garlic - ½ tsp

Tomato ketchup - 2 tsp

Oregano - 1 tsp

Red chilli powder - 1 tsp

Olive oil - 2 tsp

Salt

 

How to prepare?

 

In a pan, heat olive oil and garlic and spring onions. Fry them.

Add tomatoes, red chilli powder, and tomato sauce and mix well. Cook for 2 minutes.

Now add kidney beans, vegetable stock, and some salt.

Now cook for 10 minutes.

Serve hot.
