Mother’s Day Recipes

Struggling to come up with a good Mother’s Day gift? Just grab a spatula and a kadhai and surprise your mother with a delicious dish of her favourite recipe. Here’s a specially curated list of easy to cook finger-licking recipes to make your Mother’s Day extra special!
 

1. Past in White Sauce by Preeti

Cheese is a weakness for many and we bet it’s your mother’s as well! Just follow this simple recipe of Pasta in White sauce by Ms. Preeti and you’ll most definitely have the cheesiest mother’s day ever.

Ingredients
250 gms Pasta (Penne/Spiral/Fuseli)
 3 tbsp Olive Oil
 1 Spring Onion
1 Red Capsicum
1 Yellow Capsicum
5-8 batons French Beans
2 Red Carrot
Salt to taste
For White Sauce: 2 cups Milk,2 tbsp Corn Flour, 25 gms Butter, 50 gms mozzarella Cheese (grated), 1 tbsp Ginger Garlic paste, Black Pepper to taste, 2 tbsp Oregano, 1 tbsp Red Chilli flakes, Salt to taste, Parsley/coriander leaves for garnishing

How to make

White Sauce  
1. Heat butter in a pan, once the butter melts add ginger garlic paste and sauté. Now turn off the burner and add milk and corn flour. Mix it well, make sure there should be no lumps.
 2. Again turn on the burner, keep on stirring for 5-10 minutes till the mixture gets thick.
3. Add salt, black pepper, oregano and red chilli flakes as per taste. Keep stirring. Once the consistency of the milk gets thick add grated cheese. The White Sauce is ready.
 Main dish
4.Boil pasta with a little bit of salt till al dente. Drain and keep aside.
 5. Heat olive oil in the pan, add spring onions. Sauté the onions, add beans and cover and cook with the lid for 2 minutes.
 6. Now add other veggies like carrot, yellow capsicum and red capsicum.
 7. Stir fry on high heat to retain crunchiness. Add a pinch of salt. Cover the lid.
 8. Add pasta, white sauce and mix well. Serve hot, garnished with grated cheese and parsley.

2. Corn Fritters with Yogurt Dip by Chinmay Lad

Go the easy way out and fry yourself some delicious Corn Fritters with a spicy Yogurt Dip! A perfect snack option for your evening together!

Ingredients
For the Batter:
150 gm refined flour
1/2 tsp baking powder
1 egg
60 ml milk
Other ingredients:
30 gm sweet corn kernels
20 gms spring onion
30 gms coriander leaves, chopped
 Red chilli, finely chopped
For the Dip:
1 chilli
Juice of 1 lemon
1 cup of yoghurt

How to make
Batter 
1. Sieve the refined flour and baking powder together, add egg, 50 ml milk and season it with salt and pepper. Whisk into a smooth batter. Add milk if required.
2. Add the sweet corn, spring onion, coriander leaves and chopped chilli into it. Mix it well with spatula.
3. Heat about 1 tbsp of oil in a pan, and add about 1 tbsp of the batter, spread it evenly and shallow fry till golden brown on both sides.
Dip
4. Mix together yogurt, lemon juice, coriander leaves and chilli. Serve Corn Fritters with the dip.

3. Potato Peas Cutlet by Aruna Patel

Potato and Peas are a match made in heaven and it’s impossible to go wrong with this combination.

Ingredients
2 boiled potatoes, mashed
1/2 cup green peas, crushed
2 tbsp green chillies, crushed
2 tsp Sesame seeds(til)
1 tbsp garam masala powder
1/2 tbsp sugar, crushed
Bread crumbs
1 tbsp lemon juice
Salt to taste
4 cups of oil

How to make
1. Add mashed potato, green peas, green chilli, til, salt, garam masala, sugar, lemon juice and mix well to make a medium thick dough by kneading with your fingers.
2. Add bread crumbs and mix again. Take small portion of the prepared mixture and shape it like a thick disc or any convenient shape.
3. Roll the prepared cutlets in bread crumbs and deep fry in oil over medium flame until golden brown on both sides. Flip them as required to make both sides golden brown.
4. Serve hot with green chutney and tomato sauce.

Tips: To make green chutney, mix coriander leaves, lemon juice, salt and sugar and grind to a smooth paste.

4. Chilli Garlic Pulav by Dimple Sain

You can never go wrong with a flavoursome spicy dish and if your mother is also a fan of all things spicy then this Chilli Garlic recipe is definitely the way to go!

Ingredients
1 onion, sliced
6-8 garlic cloves, chopped
1/2 tsp garlic paste
1 carrot, chopped
1/2 cup peas
1/2 cup cauliflower, chopped
1 capsicum, chopped
1 tsp cumin seeds
1 tsp red chilli powder
Salt
1 tsp Chilli-garlic paste
1/2 tsp soya sauce
Whole garam masala: 3-4 dry red chillies
1 bay leaf/tej patta
3-4 cloves
2 cup rice cooked with bay leaf, cloves and cardamom

How to make
1. Heat oil in a pan, add bay leaf, cloves and dry red chillies. Then add onion slices and sauté till brown.
2. Once the onions are brown add garlic paste and garlic cloves and sauté. Add all vegetables (peas, carrot, capsicum, cauliflower) and sauté for about 3 minutes.
 3. Add salt to taste, cumin seeds, red chilli powder and mix well. Finally add chilli garlic paste, soya sauce and cooked rice and mix well.
4. Garnish with chopped coriander and lemon wedges. Serve hot.

5. Chocolate Lava Cake by Roop Brar

Who doesn’t love some chocolate on a special day? Surprise your mother with this mouth-watering Choco lava cake which is sure to melt her heart for you!

Ingredients 
120 gms butter, salted
140 gms castor sugar
220 gms milk chocolate
 90 gms maida
6 eggs
Vanilla essence
 
How to make
1. Mix butter with chocolate in a bowl and microwave for 2 minutes till both melts. Stir well to check if all of chocolate and butter have melted. Keep aside.
2. In another bowl, break eggs and beat till fluffy. Add castor sugar and whip again. Keep aside.
3. Fold the chocolate-butter mixture into the egg-sugar mixture. Add flour bit by bit to this and mix well.
4. Add vanilla essence, mix well. Pour in greased and dusted moulds/tins and bake in a pre-heated oven for 10 minutes at 210 degrees centigrade.
5. Sprinkle castor sugar and serve with vanilla ice-cream.

6. Bread Pizza By Vijaylaxmi Nair

This delicious Bread Pizza topped with some melted cheese and yummy veggies is definitely a great breakfast option to help your mother begin her special day in the best way possible!

Ingredients
Bread slices
1/4 cup cabbage, chopped
4 tsp onion, finely chopped
Salt
Bell peppers, chopped
Green chillies, finely chopped
4 tbsp semolina/suji
4 tbsp malai
1/2 tsp clarified butter/ghee
Milk
Oil

How to Make
1. Cut the bread slices into roundels. Keep aside.
2. Mix together semolina, malai, cabbage, onion, green chillies, salt, ghee. Add milk and mix well.
3. Apply the paste on the bread slice and top with bell peppers. 
4. Make the rest of bread pizzas. You can add topping of your choice. Grate cheese if desired.
5. Roast on tawa with little oil on both sides. Serve hot with tomato sauce.

7. Paneer Chilli by Trupti Shah

Your mother deserves the best! Try this delicious finger-licking Paneer Chilli recipe for a surprise which is as delightful as the recipe itself. 

Ingredients
Cottage cheese, cut into long pieces
Capsicum, cut into long pieces
2 tbsp arrowroot powder
Oil
Coriander leaves
2 green chillies, cut into long pieces
1/2 tsp ginger, finely chopped
Ajinomoto
1 tbsp soya sauce
Salt to taste

How to make
1. Boil 2 cups water in a pan. Add the cottage cheese slowly and cook on a medium flame stir carefully for 2 minutes. Strain the cottage cheese in a strainer. Cool a little.
2. Heat 2-3 tablespoons oil in a non-stick kadhai. Add the capsicums and salt to taste and sauté for 2-3 minutes mixing well.
3. Add green chillies and finely chopped ginger and sauté on a medium flame till capsicum becomes a little soft.
4. Take arrowroot in a bowl. Add 1/2 cup water and make a think slurry out of it. Keep it aside.
5. Add a pinch of ajinomoto to the capsicum and mix well. Cook stirring continuously for some time.
6. Heat 1 tablespoon oil on a tava. Dip the cottage cheese in the arrowroot slurry and place on the tava. Cook for 1-2 minutes till crisp on a low flame.
7. Keep stirring the capsicum so it does not stick. Add the arrowroot slurry to the capsicum and mix well till thick. Add the soya sauce and cook stirring for 2-3 minutes.
8. Add the cottage cheese to the mixture and mix well. Add a little water if necessary. Add a little salt to taste and mix well. Remove in a serving bowl. Garnish with coriander leaves and serve hot as a snack.

8. Simple Thai Curry By Kabir Joshi

Leave it to some delicious Continental food to make your mother jump off her feet with excitement! Make her this super easy Thai Curry for a special Mother’s Day dinner together!

Ingredients 
Yellow pumpkin, cubes
Sweet potato, cubes
For the paste: Thai ginger/galangal
Lemon juice
Red chilli flakes
Garlic
Cumin powder
Coriander powder
Soya sauce
Green chillies
200 ml coconut milk
For the Coconut Rice
2 cup basmati rice
1 cup coconut milk
1 cup water

How to make
1. Grind together all the ingredients for the paste and keep aside.
2. Heat oil in a pan and lightly sauté pumpkin and sweet potato. Add this to the curry paste. Also, add 2 cups of water.
3. Bring the curry to boil and let the vegetables become tender. Add sugar to balance the acidity.
For the Coconut Rice
4. Mix together basmati rice, coconut milk and water together and cook till rice is done.
5. Serve simple Thai pumpkin and potato curry with coconut rice.
