Nothing seems more comforting than lounging at home with a big bowl (or plate) of comfort food. Delicious, wholesome and utterly satisfying, comfort food is the go-to meal for a truly indulgent experience. 
Often, comfort food recipes are believed to be complicated and time-consuming causing most people to order out. However, with the COVID-19 pandemic still going strong, cooking at home seems to be the safer option. 
This World Food Day, we bring you quick and easy comfort food recipes that are sure to delight you. Whether you are looking to prepare a meal for your family or snuggle in your blanket while watching your favourite TV shows, we bring you the perfect food accompaniment with easy comfort food recipes.

1. Black Bean Burritos

Burritos are flour-filled wraps that contain a savoury filling. This can be chicken or vegetable-based. One of the all-time best recipes, we bring you a vegetarian version of burritos that is delicious, easy and comforting.

1 tablespoon oil
1 medium onion, chopped 
1 medium tomato, chopped
1 medium green pepper, chopped
1 small lettuce, shredded
1 cup black beans (soaked overnight and boiled)
1 cup shredded, cheddar cheese 
Tortilla wraps
Seasoning as per taste 

Method of preparation

In a bowl, mix the tomatoes and lettuce and keep aside. 
In a pan, add the oil on medium heat. Once warmed, add the onions and green pepper and sauté until tender. Add the beans to this mix and mix well. 
Mix the bean and veggie mix to the bowl of tomatoes and lettuce. Mix well and add seasoning as per taste.
Warm a tortilla wrap lightly and place it flat on a plate. Take a spoonful of the mixture and line it along one side of the tortilla. Sprinkle the shredded cheese. You can also add sour cream or salsa to your mix here. 
Roll the wrap carefully and fold in the ends. Black bean burritos are ready to enjoy.

2. Asian-style ramen noodles

Instant noodles are something a lot of people have stocked up on during the lockdown. This World Food Day, we take your simple bowl of noodles and transform it into Asian-style ramen. A hearty bowl of goodness, this style of ramen is a favourite when it comes to easy comfort food recipes.  

1 packet of instant ramen noodles
1 small onion, chopped
1 small carrot, chopped
0.5 cup baby corn, chopped
0.5 cup broccoli, chopped
5 cloves of garlic, chopped
1 tablespoon finely chopped or grated ginger
Handful of spinach leaves, roughly chopped or torn
1.5 tablespoons soy sauce
1.5 cups of water
Seasoning as per taste

Method of preparation

In a medium saucepan, boil water and cook the noodles. Be sure not to overcook them as they may start to clump. Drain the water and set the noodles aside. 
In a non-stick pan, sauté ginger and garlic with onions till they start to brown. Add water and soy sauce to this and mix well. 
Now add your choice of seasoning. In case your noodle packet comes with a spice-mix sachet, you can add this as well.
Boil this mix on sim heat for 10-15 minutes. 
In another pan, lightly cook your vegetables. Make sure they are not raw but still retain a bit of crunch. Based on the type of vegetables you opt for, cooking time may vary. Don’t cook leaves with this mix, but blanch them separately and add later. 
After your soy sauce broth is ready, turn off the flame. 
Add the broth to a bowl and top it with the veggie mix. Your indulgent bowl of comfort food is ready to eat.

3. Crunchy Fish Sticks

Fish sticks are one of the most loved comfort foods around the world. The nutritious properties of fish combines with the decadent taste of this preparation make it one of the all-time best recipes. Perfect as a snack or a meal, these fish sticks have a delicious crunch on the outside while retaining their moistness inside. 

8-10 fish fillets (1-inch strips)
1 egg
0.5 cup bread crumbs, dried
0.5 cup all-purpose flour
1 spoon oil with a brush
Seasoning as per taste

Method of preparation
Preheat your oven to 200° Celsius. Grease a baking dish with oil using a brush and keep aside. 
Take your bread crumbs in a bowl, add seasoning and mix well. 
Keep the flour in another bowl. 
Beat the egg well and place aside in a third bowl. 
Take a fish stick and dip it in flour till it is covered well. Let the excess drip back in the bowl for a thin and even coating.
Next, dip the fish stick in the egg and cover it with the bread crumb mix. Gently pat the stick to help the crumbs stick the egg coating.
Place the prepared fish stick on the greased oven tray.
Repeat these steps with the remaining fish sticks.
Bake the sticks for 10 mins and your nutritious comfort food is ready to enjoy.
Note: Be sure to season the bread crumb mix well for maximum flavour.

4. Veggie Quinoa Salad

Salad is more than a mix of bland veggies with a light dressing. Today, we bring you a healthy and wholesome salad which also serves as a delicious bowl of comfort food. 

1 medium cucumber, diced
1 medium tomato, finely chopped
0.5 cup fresh parsley, finely chopped
2 green onions, chopped
2 tablespoons of water
0.75 cup cooked quinoa
1.5 tablespoons yogurt
1 tablespoon mayonnaise
1 teaspoon mustard sauce
0.25 cup feta cheese, crumbled
3 tablespoons extra virgin olive oil
3 tablespoons lemon juice
Seasoning as per taste

Method of preparation
In a bowl, take your cooked quinoa and add the chopped vegetables to it. Mix well with lemon juice and seasoning. 
To prepare your salad dressing, in a bowl add water, yogurt, mayonnaise, and mustard sauce. You can either mix it well by hand or use a blender to mix these components. 
To your bowl of quinoa, add the dressing and top with chasse crumbs. 
Option: For chicken eaters, you can also add pre-grilled chicken strips to your salad
Note: To cook quinoa, simply take 1 part of quinoa to 2 parts water and boil on medium for 10-15 minutes till water is absorbed.

5. Decadent Chocolate Pudding

No list of comfort food recipes can be complete without a chocolate dessert. A quick and easy recipe, this chocolate pudding can be made easily at home while making you feel like you’re at a café. 

2 cups room temperature milk (full cream works best)
1 tablespoon butter 
0.5 cup granulated sugar
0.25 unsweetened cocoa powder
1 teaspoon vanilla essence
2 tablespoons cornstarch
A pinch of salt

Method of preparation
In a medium saucepan, add sugar, cocoa powder, salt and corn-starch. Mix well. Do not turn on the heat. 
Next, add the milk to this mix slowly while stirring constantly. Do not add all the milk at once as it will form lumps in the mixture. Add the milk a little at a time and keep whisking the mix for a smooth consistency. Bring the mix to a bowl on medium heat. Keep stirring the mix and cook for 1-2 minutes. 
Remove the pan from heat and add butter and vanilla to the mix. Stir it well.
Spoon the mix into serving bowls and place in the freezer. Once set, your pudding is ready. 
Suggestion: For a bit of added flair you can top your pudding with various options such as fresh fruits, whipped cream, wafer biscuits, ice cream or even colourful sprinkles.
