Let’s celebrate the most innocent dessert out there: Ice Cream!

Ice cream is one food that appeals to people with a wide range of diets, that’s why it is considered a soul food. World ice cream day is upon us and it is time for us to spread joy and satisfy your sweet tooth cravings with some easy to cook homemade ice cream recipes.

1. Quick banana ice-cream recipe

Ingredients:

❖    Ripe bananas - 4 nos.
❖    Milk - 4 tbsp
❖    Toasted almonds - 2 tbsp
❖    Chocolate sauce - 2 tbsp

How to prepare?

1.    Cut the bananas into medium sized chunks and place in a tray, cover well.
2.    Freeze the bananas for at least 1 hour or until they seem frozen.
3.    Now add the banana chunks and milk in the food processor and keep blending until it achieves a smooth and creamy texture.
4.    Now serve in separate bowls and top it off with some almonds and chocolate sauce as per taste.

2. Strawberry ice cream recipe

Ingredients: 

❖    Strawberries - 400 gms
❖    Lemon juice - 1-2 tbsp
❖    Double cream - 600 ml
❖    Whole milk - 300 ml
❖    Caster sugar - 150 gms
❖    Egg yolks - 5 nos.
❖    Vanilla extract - 2 tbsp

How to prepare?

1.    In a food processor, whizz the strawberries to a puree and add lemon juice to taste.
2.    Whisk the sugar and egg yolk in a bowl until it turns pale yellow.
3.    In a pan, warm the milk and cream until it is steaming, not boiling.
4.    Now, pour the warm milk and cream mixture into the whisked eggs, keep whisking as you do so.
5.    Once the mixture is ready, strain it through a sieve back into the pan. 
6.    Gently cook over a medium heat until it starts to thicken (be careful not to overcook otherwise the eggs will scramble.)
7.    Transfer the mixture to a bowl and cover it.
8.    Let it cool for a few minutes before chilling it for an hour. Your custard should be ready now.
9.    Mix the vanilla extract and strawberry puree with the cold custard.
10.    Add more lemon or vanilla if required.
11.    Freeze the mixture in a container.
12.    To prevent any ice crystals, keep whisking or blending the ice cream every hour. 
13.    Your strawberry ice cream is ready now.

3. Vanilla ice cream recipe

Ingredients:

❖    White sugar - ¾ cup
❖    Heavy whipping cream - 1 cup
❖    Milk - 2 ¼ cups
❖    Vanilla extract - 2 tsp

How to prepare?

1.    In a saucepan, stir sugar, cream, and milk, on low heat until sugar is dissolved.
2.    Keep heating until a small ring of foam forms around the edge.
3.    Transfer the mixture into a container and add vanilla extract. Stir it and chill it. 
4.    Pour the ice cream into an ice cream maker and churn.
5.    When the ice cream is softly frozen, serve.

4. Chocolate ice cream recipe

Ingredients:

❖    Heavy whipping cream - 2 cups
❖    Sweetened condensed milk - 1 can
❖    Unsweetened cocoa powder - ½ cup 
❖    Vanilla extract - 1 tsp

How to prepare?

1.    In a bowl, stir together sweetened condensed milk, cocoa powder and vanilla.
2.    Whip heavy cream until stiff peaks.
3.    Mix the whip cream and sweetened milk mixture in a container.
4.    Cover the container and freeze overnight.
5.    Your chocolate ice cream is ready to be served.

5. Avocado Ice cream

Ingredients:

❖    Ripe avocados - 750 gms
❖    Lemon juice - 2 tbsp
❖    Condensed milk - 395 gms
❖    Coconut milk - 270 ml
❖    Vanilla extract - 1 tsp
❖    Chopped pistachios - 2 tbsp

How to prepare?

1.    Remove the seeds of avocados and scoop the inner part of it into a food processor.
2.    Add lemon juice to the avocados and process until it is smooth.
3.    Now, add condensed milk, coconut milk, and vanilla extract, and process until combined.
4.    Transfer to a container and freeze for 4 hours, keep stirring every hour to prevent uneven freezing and ice crystals.
5.    Your ice cream is ready.
