Rava / Suji / Semolina - ¾ cup
Mustard Seeds - ¼ tsp
Chana Dal - 1 tsp
Urad Dal - 1 tsp
Hing / Asafoetida - 1 pinch
Curry Leaves - 1 to 2 sprigs
Onion - 1 medium, finely chopped
Ginger - ½ tsp, grated
Green Chilli - 2, chopped
Carrot - 3 tbsp, finely chopped
Green Peas - 2 tbsp, fresh or frozen
Capsicum - 3 tbsp, finely chopped
Tomato - 1 large, finely chopped
Cashew Nuts - 5 to 6, fried
Coriander Leaves - 2 tbsp, finely chopped
Lemon Juice - 1 tsp
Ghee - 1 tbsp
Cooking Oil - 2 tbsp
Water - 1½ cups
Salt to taste
1. Heat ghee in a heavy-bottomed pan and rava or suji in it.
2. Roast it on a low flame and stir continuously for approximately 4 to 5 minutes until it turns light brown. Transfer to a plate when done.
3. In the same pan, heat oil and add mustard seeds. Add chana dal, urad dal, hing and curry leaves, once the seeds sputter. Cook until the dals turn light brown.
4. Add onion, ginger and green chillies, and sauté for 1 to 2 minutes until the onions turn translucent.
5. Add the rest of the vegetables and salt. Mix everything well and sauté for 2 to 3 minutes.
6. Add water and bring to a boil. Add the roasted rava or suji along with the lemon juice and mix well. Stir continuously for 1 to 2 minutes to avoid lumps.
7. Cover it with a lid and cook on low flame for 3 to 4 minutes until the mixture turns thick. Stir in between regular intervals.
8. Once done, turn off the heat and let it settle for 10 minutes before serving.
9. Garnish it with fried cashew nuts and coriander leaves and serve hot.

Suji Idli Recipe

Suji - 2 cups
Coriander Leaves - 2 tbsp
Curry Leaves - 12
Cumin Seeds - 1 tsp
Urad Dal - 2 tsp

Refined Oil- 2 tsp
Green Chillies - 2 tsp
Yoghurt - ½ cup
Baking Soda - 1½ tsp
Hing / Asafoetida - 1 tsp
Salt to taste
1. In a large mixing bowl, mix semolina, coriander leaves, salt and yoghurt with 2 cups of water. Cover with a cloth and keep aside for 15 minutes.
2. Heat oil on medium flame in a pan. Add cumin seeds, cashew nuts, urad dal, mustard seeds, curry leaves, asafoetida and green chillies and sauté for 2 minutes.
3. Pour this tempering over the prepared batter (step 1) and mix nicely. Mix in baking soda.
4. Apply oil over the idli plates, add the batter to the idli moulds and place the idli moulds in the steamer. Steam for about 10 minutes.
5. Remove the idlis from the mould one cooked and place them onto a plate. Serve with hot sambar and coconut chutney.

Semolina - 1 cup
Tomato - 2 small
Onion - 2 small
Water - 1 cup
Baking Soda - ½ tsp
Lemon Juice - 6 tsp
Green Chillies - 2
Refined Oil - As required
Salt to taste
1. Combine semolina and water in a deep bowl, and make a smooth batter. Keep it aside for a minimum of 40 minutes. Stir and mix the batter again once done, and add salt, baking soda and lemon juice. Mix the batter well to avoid lumps.
2. Heat oil on a non-stick pan and pour a small amount of batter on it. Spread the batter in a circular shape and add tomato, onion and green chillies on top.
3. Drizzle some oil on the batter and the sides of the pan. Cook the uttapam until brown from the surface then flip it and cook the other side as well. Cook the other side till the onions are brown.
4. Serve it hot with chutney.

For Batter:-
Suji - 1 cup
Sour Curd - 1 cup
Water - ⅓ cup
Eno Fruit Salt - 1 tsp
Cooking Oil - 2 tsp
For Tempering:-
Oil - 1 tbsp
Mustard Seeds - ½ tsp
Cumin Seeds - ½ tsp
Sesame Seeds - ½ tsp
Green Chilli - 1, seeded and finely chopped
Curry Leaves - 4 to 5
Coriander Leaves - 1 tbsp, finely chopped
1. In a mixing bowl, mix suji, salt and water to make a smooth paste. Avoid lumps and let it sit for 15 to 20 minutes.
2. Add 1 large glass of water in a steamer and heat it over medium flame. Grease the tray of the steamer with 1 tsp oil.
3. Add 1 tsp oil and Eno in the batter. Mix well for approximately 1 to 2 minutes until bubbles start to form on the surface.
4. Pour it into the greased tray immediately until half full and place it in the steamer. Steam it on high flame for 3 minutes and on a medium flame for 12 minutes.
5. After 15 minutes, insert a toothpick and check if it comes out clean. If yes, then take out the trays from the steamer and let it cool for 3 to 4 minutes before cutting it into small square dhoklas.
6. In a small pan, heat 1 tbsp oil for tempering. Add mustard seeds and cumin seeds. Once the seeds begin to sputter, add sesame seeds, green chilli and curry leaves. Sauté it for a few minutes and turn off the flame.
7. Pour this tempering over the suji dhoklas and garnish it with coriander leaves.
8. Serve hot with mint chutney.

1. In a large mixing bowl, add the rava along with the curd, carrots, capsicum, green chillies, french beans, onions, coriander, pepper powder and salt. Mix everything well.
2. Add a little water about ¼ cup and mix it well to form a thick batter with pouring consistency. Cover and set it aside for 10 to 15 minutes.
3. In a pan, heat 2 tsp of oil and add mustard seeds once heated. Add the curry leaves when the seeds start to sputter. Add rava to it and mix well.
4. Add eno and mix it well.
5. Take an appam pan and grease it with oil. Once done, pour the appam mixture in adequate quantity in each cavity.
6. Cover and cook in a steamer for about 3 to 4 minutes on low flame until the bottom side is golden brown.
7. Flip the appams and cook for another 2 to 3 minutes.
8. Once done, remove the appam pan from the steamer and let it cool down for 1 to 2 minutes.
9. Serve hot with coconut-coriander chutney.

White Bread - 6 slices
Rava - ½ cup
Curd - ½ cup
Tomato - 2 tbsp, finely chopped

Ginger - ½ inch, finely chopped
Salt to taste.
1. In a mixing bowl, add rava and curd together, and whisk it well. Add chopped green chilli, ginger, salt, tomatoes, capsicum and green coriander. Mix everything well, set it aside for 5 minutes.
2. Take a bread slice and spread 1 to 2 tsp batter over it. Spread it evenly.
3. Heat some ghee on a tawa. Once heated, place the prepared bread slices over it and toast till the bottom turns golden brown. Flip the toast and cook the other side as well.
4. When both the sides are toasted well keep it on a plate and cut diagonally.
5. Serve steaming hot with green mint chutney and tomato ketchup.
