Gudi Padwa is a joyous occasion where people dress up in new clothes and women wear traditional jewellery called dejhor. The Gudhi that is elevated on Gudi Padwa outside the windows is said to ward off evil and welcome prosperity and happiness into the house.

Ingredients:

  • Yoghurt (Curd) - 400 gm
  • Black Cardamom - ¼ tsp
  • Milk - 50 ml
  • Sugar - 250 gm
  • Saffron - 2 pinches

For Garnishing:-

  • Almonds - 7
  • Pistachios - 7

Instructions:

  1. To make this Shrikhand recipe, firstly place almonds and pistachios over a chopping board and chop them finely. Now, take a muslin cloth and pour the curd into it. Tie and hang the cloth until the water is drained from it. Also, put cardamoms in a grinder and grind them well to form a powder.
  2. Next, in a bowl mix curd and sugar. Blend them well. Make sure the consistency of the mixture is smooth.
  3. Now, add cardamom powder and saffron strands in the mixture and stir it. While stirring continuously, mix warm milk in the bowl. Combine all the ingredients well.

Maharashtrian Masale Bhat

Ingredients:

  • Long Grained Rice - 1 cup
  • Cauliflower - 1 cup, chopped
  • Carrot - 1
  • Brinjals - 2, small
  • Green Bell Pepper - 2, small
  • Potato - 1, small
  • Yoghurt (Curd) - 2 tbsp
  • Bay Leaf (Tej Patta) - 1
  • Kala Masala - 3 to 4 tsp
  • Kashmiri Red Chilli Powder - ½ tsp
  • Mustard Seeds - 1 tsp
  • Asafoetida (Hing) - 1 pinch
  • Water - As required
  • Salt - As required
  • Oil - 2 tbsp

For Garnishing:-

  • Coconut - 1 tbsp, grated
  • Coriander Leaves - 1 tbsp, chopped
  • Cashew Nuts - 15 to 20
  • Ghee - 1 tsp

Instructions:

  1. Rinse and soak the rice for 30 minutes in enough water and chop all the vegetables.
  2. In a pan, heat oil and add the mustard seeds and bay leaf.
  3. Once the mustard seeds crackle, add all the chopped veggies along with yoghurt.
  4. Saute the veggies for 3 to 4 minutes stirring often.
  5. Meanwhile, heat 2.5 cups of water and bring it to a boil.
  6. Add the red chilli powder, kala masala, asafoetida to the sauteed veggies. Stir and saute for a minute.
  7. Then add the rice and saute for a minute. Add the hot water, salt as required and stir well.
  8. Cover the pan and let the rice simmer on a low flame till the grains are well cooked
  9. Meanwhile, roast the cashew nuts in a pan till golden.
  10. Once the Masale Bhat is cooked, let it sit in the pan for 5 minutes.

Ingredients:

  • Coriander Leaves - 2 cups
  • Ginger Paste - ½ tsp
  • Sesame Seeds - 2 tsp
  • Turmeric Powder - 1 tsp
  • Cumin Powder - ½ tsp
  • Green Chilli - 3, minced
  • Sugar - 1 tsp
  • Virgin Olive Oil - 1 cup
  • Gram Flour (Besan) - 1 cup
  • Garlic Paste - ½ tsp
  • Red Chilli Powder - 1 tsp
  • Coriander Powder - ½ tsp
  • Garam Masala Powder - ½ tsp
  • Salt - As required
  • Baking Soda - 2 pinches

Instructions:

  1. To make this Kothimbir Vadi recipe, firstly pluck coriander leaves only. Wash thoroughly and drain excess water. Spread them on absorbent paper napkins and pat dry them to remove lingering moisture. Once dried, chop the coriander leaves finely.
  2. Combine all the ingredients with coriander leaves except oil. Check for salt and spice and adjust accordingly.
  3. Mix well. As you mix, the dough starts to moisten and this will help to bind it together. Avoid adding water to the dough.
  4. Shape the dough in a log shape or spread it out on a greased dhokla plate. Steam it in a steamer or pressure cook without a whistle for 20 minutes or until firm.
  5. Cool the dough and cut them into rounds or squares with a serrated knife. Cut the slices thin so that they are fried evenly and thoroughly.
  6. Heat oil in a nonstick pan. Shallow fry the vadis (fritters) on medium-low heat till golden on both sides.

Chana Usal

Ingredients:

  • Chana - 1 cup
  • Onion - 1
  • Tomato - 1
  • Ginger-Garlic Paste - 1 tsp
  • Fresh Coconut - ½ tsp, grated
  • Coriander Seeds - 1 tsp
  • Turmeric Powder - ½ tsp
  • Malvani Masala - 1 tsp
  • Oil - 1 tbsp
  • Curry Leaves - 4 to 5
  • Salt - As required

Instructions:

  1. Soak dry chana in enough water for at least 5 to 6 hours or overnight.
  2. The next day, cook the soaked chana in a pressure cooker till they are completely cooked.
  3. Now, heat 1 tsp oil in a pan and add sliced onion and fry till it turns translucent.
  4. Add coriander seeds and saute. Later, add grated coconut till it turns golden.
  5. Turn the heat off. When the mixture is cooled down, grind it to a smooth paste using a grinder.
  6. Heat the remaining oil and add curry leaves, chopped onion and fry till it turns translucent. Then add the ginger-garlic paste, coconut mixture and chopped tomatoes and saute for a minute.
  7. Add malvani masala, cooked chana to the mix and saute it.
  8. Now, let it simmer for another 10 minutes, keeping the lid closed.

  • Tamarind Chutney - 2 tsp

Ingredients:

  • Coconut - 1 cup, grated
  • Ghee - ½ tbsp
  • Milk - 1 cup
  • Khoya - ½ cup, grated
  • Sugar - ½ cup
  • Green Cardamom - ½ tsp

For Garnishing:-

  • 50 gm silver vark - 50 gm

Instructions:

  1. Add grated coconut, sugar, cardamom powder and milk in a microwave-safe bowl. Microwave the mixture at 60% power for 10 mins or till the mixture is thick.
  2. Now, add grated dried khoya and microwave the mixture on 60% power for another 5 minutes. Keep stirring the mixture occasionally. Then, add ½ tablespoon ghee to the mixture and mix it again.

  • Pigeon Peas - 1 cup
  • Asafoetida - ½ tsp
  • Sugar - ¼ tsp

  • Rice - 1 cup

Instructions:

  1. Wash pigeon peas or arhar dal 4-5 times and put it in a pressure cooker on medium flame along with water, turmeric powder, and asafoetida (hing). Cook the dal till 4 whistles and when done, let the pressure release on its own. Open the lid when done and mash the dal. Afterwards, add some salt and sugar to it.
  2. Next, heat a large saucepan on medium flame and bring the mashed dal to a boil. Feel free to add some more water to change the consistency of the mixture. Once the mixture is boiled, the varan is ready!
  3. Now, boil water in a medium pan. Once done, add a little salt, 1 tsp oil and uncooked rice. Let the rice steam.

Ingredients:

  • Sabudana or Sago - 250 gm
  • Water - ½ cup
  • Almonds - Handful, chopped
  • Saffron - 7 strands
  • Milk - 1 litre
  • Sugar - 1 cup
  • Raisins - ¼ cup
  • Green Cardamom - 4

Instructions:

  1. Wash the sabudana (sago) pearls thoroughly in running water to separate the starch from. Now, take a bowl and soak the sabudana pearls in it with some water for 3-4 hours. Drain the water.
  2. Heat a pan over a medium flame and add in the milk. Keep stirring it till the quantity is reduced to half. Next, add in the sugar and keep stirring, add in the washed sabudana, and cardamom and saffron strands. Boil the kheer and cover the lid.

  • Bengal Gram Water (chana dal Water) - 1 cup

  • Salt - As required
  • Jaggery (Gur) - 2 tbsp, grated
