Ingredients:

  • Milk - 1 cup
  • Cream - 3 cups
  • Mango - 1 cup, pureed
  • Mango - 1 cup, finely chopped
  • Custard Powder - 1 tbsp
  • Vanilla - 1 tbsp
  • Sugar - 360 gms / 1 cup

 

Instructions:

  1. Start making mango ice cream by mixing the custard in ¼ cup of milk and keep it aside.
  2. Heat the rest of the milk and sugar together. Let the sugar dissolve and let the mixture come to a boil.
  3. When it boils, add the custard mixture and bring it to a boil again, simmer for half a minute, turn off the heat and cool to room temperature.
  4. Add mango puree, mango pieces, cream and vanilla. Mix well and transfer in a container with a tight lid.
  5. Freeze till it is almost set and whip it with a hand beater. Once done, place it back into the freezer.
  6. Ensure that the lid is tightly shut to avoid crystals from forming. Whip once more when almost set and place it back in the freezer overnight.

Ingredients:

  • Mango 1 cup, pureed
  • Fresh Cream - 150 gms
  • Agar-Agar - 1½ tbsp
  • Marie Biscuits - 2 cups, finely grinded
  • Cream Cheese - 250 gms
  • Sugar - ¾ cup
  • Water - ½ cup
  • Butter - 100 gms, unsalted and melted

 

Instructions:

  1. To prepare a no-bake mango cheesecake, take Marie biscuits and crumble them using a food processor. Add melted butter and pulse the mixture again until it comes together. Then take a springform pan lined with aluminium foil and press the buttered biscuit mixture over it. Keep it in a refrigerator for a while until the mixture settles down.
  2. Meanwhile, in a large mixing bowl, combine cream cheese, fresh cream and sugar. Whisk until all the ingredients are combined well together. Keep the cream cheese mixture aside.
  3. Next, add agar-agar and mango puree to the hot water and stir until properly mixed. Divide this mixture into 2 equal parts. The first part is to be kept aside for later use, while the other half of this mixture is to be poured over the cream cheese mixture. Stir well until nicely blended.
  4. Now, pour the mango-cream cheese mixture over the Marie biscuit layer and refrigerate again for 15 to 20 minutes. Take the pan out and gently layer with the first part of the mango-agar mixture that was kept aside [Refer to step 3]. Make sure that the two layers are separated and neatly spread. Return the pan to the refrigerator and chill it overnight.

  2. The next step is to take a pan and heat some water and sugar on medium flame to prepare the sugar syrup. Although mangoes are sweet, to reduce the slight tanginess of mangoes, adding sugar to this recipe is essential. Allow the sugar syrup to boil and wait until it thickens to a two-string consistency. Once done, leave it to cool.
  3. Once the sugar syrup attains a normal room temperature, pour into a blender, add the chopped mango pieces, lime juice and a little dash of salt, blend all the ingredients into a smooth paste.

  • Mango - 300 gms
  • Fresh Cream - 450 ml
  • Vanilla Custard Powder - 3 tbsp
  • Milk - 300 ml
  • Sugar - ½ cup

  1. To prepare mango custard, first, wash the mangoes and peel them. Next, finely chop the mangoes into small pieces. Reserve a few pieces for garnishing and grind the remaining into a thick pulp.

Ingredients:

  • Mango - ½ cup, pureed
  • Thick Yoghurt or Hung Curd - ½ cup
  • Evaporated Milk - ½ cup
  • Sugar - 2 tbsp
  • Condensed Milk - ¼ cup
  • Cardamom Powder - ¼ tsp
  • Saffron - A few strands
  • Dry Fruits - A handful of your choice, chopped

 

Instructions:

  1. In a large bowl, mix the mango puree, thick yoghurt or Greek yoghurt, evaporated milk, sugar, condensed milk and cardamom powder.
  2. Adjust the sweetness according to your taste.

Ingredients:

  • Milk - 5 cups
  • Saffron Strands - 5
  • Mango Pulp - 2¼ cup
  • Sugar - 3 tbsp
  • Fresh Cream - ¾ cup

 

Instructions:

  1. To make mango kulfi, boil milk in a heavy-bottomed pan. Lower the heat and let it simmer.
  2. Add sugar and cook till the milk is reduced to a third and is thick and creamy. Add mango pulp and saffron to it. Cook further for 2 minutes for the flavours to blend in.
  3. Leave it to cool until it comes to room temperature and mix in the cream. Spoon the mixture into 6 to 8 kulfi moulds.
  4. Cover tightly with foil and freeze for at least 6 hours.

Ingredients:

  • Gelatin - ¾ tsp, unflavoured
