It is an age-old tradition in India to grind all the masalas at home. Grinding the spices at home gives them a distinctive taste and they tend to last longer as well. But over the years, as people have gotten busy, this tradition is lost and many of us rely on store-bought masalas.

Indian masalas are used to flavour stir-fries, curries, sabzis, etc. and are used all over India. These Indian masala blends can completely change the look and taste of a dish. Store-bought masalas lack the flavour of freshly ground masalas. Though they serve the purpose of providing the dish with flavour, the freshly ground masalas elevate the taste of the dish to another level.

Homemade Garam Masala

Garam Masala is a flavourful blend of ground Indian spices originating from South Asia. It is commonly used in Indian, Pakistani, Nepalese, Bangladeshi and Afghan cuisines. Though the recipe of this masala differs from region to region, the Indian masala version of it is considered the most authentic. Follow the below-given instructions to make homemade Garam Masala-


Ingredients:-

  • Cumin Seeds - 150 gms
  • Black Cardamom Seeds - 50 gms
  • Cinnamon - 25 gms
  • Cloves - 25 gms
  • Peppercorns - 25 gms
  • Bay Leaf / Tej Patta - 4

Instructions:-

  1. To prepare homemade Garam Masala, gather all the Indian spices mentioned above and dry them under the sun or slightly heat them in the oven to get rid of the moisture.
  2. Once done, grind all the masalas in a grinder.
  3. Store in an airtight jar.

Chole Masala

Chole Masala or Chana Masala is spicy Indian masala with a sour citrus note. This aromatic Indian spices blend is used to make Chole or Chana, widely popular in Northern India. Though you can always buy Chole Masala from a store, blending freshly at home gives it a distinct taste. Follow the Chole Masala recipe given below to make it at home-


Ingredients:-

  • Amchoor - ⅓ cup, powdered
  • Anardana - ¼ cup
  • Garam Masala - 1 cup
  • Coriander Seeds - ¾ cup, powdered
  • Red Chilli / Lal Mirch Powder - 2 tbsp
  • Sonth / Dry Ginger - ½ cup, powdered
  • Salt - 1¾ cup


Instructions:-

  1. To make Chole Masala at home, mix all the above mentioned powdered Indian spices together in the jar.
  2. Shake the jar well to thoroughly mix the masalas.
  3. Once done, store this Indian masala in an airtight container.

Biryani Masala

Biryani Masala is a strong and aromatic blend of Indian spices and condiments that gives the dish its distinctive taste.   • Allspice / Kabab Chini - 60 corns
  • Star Anise - 4
  • Green Cardamom - 16

Chaat Masala

Chatpati Chaat is an all-time favourite in every Indian household. The chatpata flavour of the different Chaats comes from a blend of Indian spices called Chaat Masala. Apart from chaats, this Indian masala can be also used to flavour potatoes, fruits, egg and salads. Follow the recipe given below to make Chaat Masala at home-


Ingredients:-

  • Coriander Seeds - 1 cup
  • Cumin Seeds - 1 ¼ cup
  • Ajwain Seeds / Carom Seeds - ½ cup
  • Amchoor - ½ cup
  • Garam Masala - 2½
  • Black Rock Salt / Kala Namak - 1¼ cup
  • Black Pepper - 4 tsp, powdered
  • Citric Acid - 2 tsp (approx)
  • Mint Leaf - ½ cup, dried and powdered


Instructions:-

  1. Roast the Coriander Seeds, Cumin Seeds and Ajwain Seeds in a heavy-based pan till dark brown.
  2. Turn off the heat and leave the masalas to cool down.
  3. Next, put all the Indian spices in a blender jar and blend into a fine powder.
  4. Once done, store this Indian masala in an airtight container.

Tandoori Masala

Pav Bhaji Masala

Pav Bhaji is loved by adults and kids alike! It is a go-to recipe for dinner parties. The special Indian masala mix is what makes Pav Bhaji tasteful and flavourful! Follow the below- given recipe of Pav Bhaji Masala-


Ingredients:-

  • Red Chilli - 7, dry
  • Coriander Seeds - 4 tbsp
  • Cumin Seeds - 2 tbsp
  • Black Pepper / Kali Mirch - ¼ tbsp
  • Cinnamon Stick - 1/2 inch
  • Cloves - 3
  • Black Cardamom - 4 to 5
  • Amchoor - 2 tbsp
  • Fennel Seeds - 1 tbsp
  • Sugar - ½ tbsp, powdered


Instructions:-

  1. In a pan, dry roast all the Indian spices [except Amchoor] till they are golden-brown on a low-medium flame.
  2. Next, add the Amchoor powder and roast for a minute.
  3. Once done, turn off the flame and leave the roasted masalas to dry. Add the powdered sugar to it after it cools down.
  4. Now, grind all the masalas into a fine powder.
  5. Once done, store this Indian masala in an airtight container
