  • Carrot - 2, large
  • Black Pepper Powder - ½ tbsp
  • Tomato Puree - 2 tbsp

  1. To make Fried Rice with Eggs, firstly, wash the rice under cold running water thoroughly. Once done, parboil it and keep it aside.
  2. Next, wash carrot and capsicum and finely chop them. Then, peel and finely chop the onion as well. Once done, grind green chillies to a fine paste.
  3. Now, in a pan, heat oil on medium flame. Once the oil is hot enough, add chopped onions and saute on high flame for 2 to 3 minutes. As the onions turn slightly pinkish, add the remaining vegetables and cook on high flame for 3 to 4 minutes.

  • Red Chilli Powder - 1 tsp
  • Yoghurt / Curd - 1 cup

  • Green Cardamom / Hari Elaichi - 6
  • Bay Leaf / Tej Patta - 4
  • Salt - As required
  • Refined Oil - 2 tbsp
  • Star Anise / Chakri Phool- 1
  • Mace Powder / Javitri - ½ tsp
  • Ginger Paste - 1 tbsp
  • Garam Masala Powder - 1 tsp
  • Mint Leaves - 2 sprigs
  • Saffron / Kesar - A pinch
  • Water - 7 cups


  1. To make Egg Biryani, firstly, wash and soak rice for about 30 minutes in water and the saffron in lukewarm milk.
  2. Heat oil in a pan over moderate flame and once it is hot enough, add sliced onions and fry until golden brown. Once done, keep them aside on a plate.
  3. Now, hard boil the eggs and pierce them with a fork. Lightly fry the eggs in the remaining oil and once done, keep them aside for further use.
  4. Next, heat oil in a pan and add the whole spices. Cook till they begin to splutter. Later, add ginger-garlic paste and saute until the raw smell goes off. Add chilli powder and garam masala powder to this and Saute for a few seconds. Now, add yoghurt followed by salt and mint leaves.
  5. Add eggs, along with ¾ of the fried onions, stir well and cook over medium-low heat until the gravy thickens. Remove it from heat and set it aside.
  6. Now, boil 6 cups of water and add the spices and salt. Allow it to simmer for 4 minutes and add the rice. Let it cook for approximately 15 minutes. Drain the rice when it is cooked al dente. Reserve 1 cup of the water.
  7. Start layering the biryani. Add half of the rice to the pot, layer the eggs along with masala. Layer again with the remaining rice, sprinkle the mint leaves and the rest of the fried onions. Pour the saffron soaked milk and sprinkle the reserved water and the kewra water.
  8. To cook it the traditional way, Seal the pot with a layer of wheat dough. You can also seal it with foil or a tight lid. Cook it on high heat for about 5 minutes. Place the pot over a girdle on low heat for 10 minutes.
  9. Turn off the heat and allow it to rest for another 10 minutes.
