Chicken Tikka

Chicken Tikka is one of the most popular appetisers of Indian cuisine. Be it a high-end restaurant, five-star hotel or a roadside Dhaba, Chicken Tikka is found everywhere and enjoyed with the same enthusiasm! To prepare a delicious, mouth-watering and flavourful Chicken Tikkas, make sure that you let the boneless chicken pieces marinate for a minimum of 6 to 7 hours or overnight. Follow the tikka recipe given below to make it to perfection-


Ingredients:

  • Chicken - 1 kg, boneless
  • Red Bell Pepper - 1
  • Garlic Paste - ½ tsp
  • Chaat Masala - 1 tsp
  • Capsicum - ½ 
  • Mustard Oil - 3 tbsp
  • Turmeric Powder - ¼ tsp
  • Lemon Juice - 2 tbsp
  • Salt - As required
  • Hung Curd - 1 cup
  • Coriander Powder - ½ tsp
  • Ginger Paste - ½ tbsp
  • Gram Flour (Besan) - 2½ tbsp
  • Onion - 1½ 
  • Kasuri Methi Powder - ½ tbsp
  • Red Chilli Powder - 1 tsp
  • Black Pepper Powder - ¼ tsp
  • Garam Masala Powder - 1 tsp

Instructions:

  1. To prepare this tikka recipe, wash the boneless chicken and pat it dry. Next, slice the chicken into bite-sized chunks.
  2. To prepare the marinade, take a large bowl and mix yoghurt, lemon juice, garlic, ginger, salt, garam masala, red chilli powder, black pepper powder, kasuri methi powder, turmeric and stir until well-coated. Mix well and then add mustard oil. Then add gram flour, chaat masala and mix once again. Once the marinade is done, taste it and adjust the seasonings.
  3. Now, add chicken pieces to it and marinate. Cover with a lid and leave it overnight in the refrigerator. The longer you marinate chicken, the more succulent and juicy it will be. Afterwards, wash the green and red bell pepper, and cut them into cubes in a small bowl. Then, peel the onion and cut it into cubes as well in a separate bowl. Keep them aside.
  4. Next, take the marinated chicken out of the refrigerator and add the cubed veggies to it. Marinate them for 10-15 minutes and line a baking tray with a foil or baking sheet. Put a rack over this baking tray for grilling the chicken tikka. Take skewers and place the marinated chicken in it along with bell peppers and onion cubes. Place them alternately and put these skewers on the rack. Make sure there is space underneath the chicken to help distribute the heat more evenly.
  5. Preheat the oven at 250 degree Celsius and add the baking tray into the heated oven. Grill the tikka for about 20-30 minutes until they are tender. You can check after 15 minutes to check if the chicken is half done. Make sure that the chicken pieces are not that big, else it will take more time to cook and the veggies will be burnt by that time. After 20-25 minutes, rotate the skewers to cook from all the ends.
  6. Once done, garnish the Chicken Tikka with lemon juice and finely chopped coriander. Serve with green chutney.

Paneer Tikka Recipe

Ingredients:

  • Paneer - 400 gms, cubed
  • Cheese - 60 gms, grated
  • Ginger - 5 ms, finely chopped
  • Coriander Leaves - 20 gms, finely chopped
  • Chaat Masala - 1 tsp
  • Pomegranate Seeds - 100 gms
  • Salt - As required
  • Green Chilli - 3, freshly ground
  • Fresh Cream - 50 ml
  • Garam Masala Powder - 50 gms

Instructions:

  1. To make this appetising tikka recipe, mash a little paneer and add finely chopped ginger, salt, fresh pomegranate seeds, green chillies and coriander into it. Stuff this mixture into paneer pieces.
  2. Next, prepare a marinade with grated cheese, fresh cream, salt, chopped coriander and a pinch of garam masala.
  3. Now, coat the stuffed paneer with the marination and refrigerate it for 30 minutes. Once it is set for 30 minutes, take out a non-stick pan, coat it with butter and drop the paneer into the pan. Let it shallow-fry till it turns light brown.

Chicken Malai Tikka Recipe

Creamy, succulent and melt-in-your-mouth delicious! The Chicken Malai Tikka recipe will absolutely blow your mind away with its rich flavours and creamy textures. Follow this tikka recipe given below to make it at home-


Ingredients:

  • Chicken - 1 kg, boneless
  • Refined Oil - 2 tbsp
  • Coriander Leaves - 4 tbsp, finely chopped
  • Butter - 2 tsp
  • Garam Masala Powder - 2 tsp
  • Green Chutney - 2 tbsp

For Marination:-

  • Fresh Cream - 100 ml
  • Cornflour - 1 tsp
  • Garlic Paste - 2 tbsp
  • Coriander Powder - 100 gms
  • Egg - 1
  • Green Chilli - 4 tsp, finely chopped
  • Ginger Paste - 2 tbsp
  • Salt - As required
  • Mozzarella Cheese - 100 gms, low-fat
  • Rice Vinegar - 50 ml

Instructions:

  1. To make this Chicken Malai Tikka recipe, wash and clean the boneless chicken pieces. Pat the pieces dry and prepare the marinade with salt, rice vinegar, ginger, garlic paste and stir it well. In a large bowl, marinate the chicken pieces with this mixture and leave them to rest overnight in the refrigerator. Take out the bowl the next morning and squeeze the chicken pieces lightly against your palms and keep them aside for a while.
  2. Now, take a bowl and add grated mozzarella cheese to it. Crush the cheese to make a paste-like consistency. Then, crack an egg in the bowl and add fresh cream along with cornflour in it. Mix all the ingredients well.
  3. Next, take those marinated chicken pieces and mix them in this cream and cheese mixture. Add the chopped green chillies and coriander powder to the bowl and stir it well. Refrigerate the chicken pieces again for 2-3 hours for marination.
  4. Finally, take out the marinated chicken pieces and arrange them on a skewer. Put this skewer in a tandoor or a griller and cook the chicken pieces for 5 minutes. When done, take out the chicken pieces carefully and hang them on a bar.
  5. Brush them with butter or refined oil and put the chicken pieces back in the tandoor or griller and cook till they become light golden in colour. 
  6. This tikka recipe is now ready to serve! Take the pieces out of the skewer on a plate and garnish with lemon juice, butter, garam masala powder, coriander or mint chutney, if you like. Toss the chicken pieces well and serve hot!

Tandoori Soya Chaap Tikka Recipe

Apart from chicken and paneer, soya is also a widely used tikka recipe ingredient. Tandoori Soya Chaap Tikka recipe is a flavourful vegetarian take on the very famous tandoori chicken tikka. Follow the Tandoori Soya Chaap Tikka recipe given below-


Ingredients:

  • Soya Sticks - 4
  • Curd - 6 tbsp
  • Salt - As required
  • Fresh Cream - 4 to 5 tbsp
  • Butter - 4 to 5 tbsp
  • Kashmiri Red Chili Powder - 2 tbsp
  • Chaat Masala - 1 tbsp
  • Kasuri Methi - 1 tbsp
  • Black Pepper Powder - 1½  tbsp
  • Cumin Powder - ½ tbsp
  • Garam Masala - ¾ tbsp 
  • Pudina Powder - ½ tbsp 
  • Turmeric Powder - ½ tbsp 
  • Onion - 1, finely chopped
  • Green Chili - 1, finely chopped
  • Coriander Leaves - 2 tbsp, finely chopped

Instructions:

  1. To make this tasteful tikka recipe, firstly prepare the marinade. Take a mixing bowl and add 6 tablespoon curd.
  2. Next, add 2 tbsp Kashmiri chilli powder, ½ tbsp garam masala, ½ tbsp chaat masala, 1 tbsp kasuri methi, black salt, pudina powder, turmeric powder, black pepper powder, ½ tbsp cumin powder and salt as per taste.
  3. Now, take the soya sticks and wash them thoroughly. You can cut them in two ways. The first option is to slice it into long pieces and remove the stick. The second way is to remove the stick and dice them into 2 to 3 cubes.
  4. Add chaap pieces in the marinade and add 2 tbsp of fresh cream. Marinate the soya chaap for as long as 30 minutes - 2 hours.
  5. Once done, take a stick and arrange the chaap pieces on it. Place it over the direct flame and cook until black spots appear.
  6. When done, take them off the flame and brush them with the butter and again cook them for 1 minute on a direct flame.
  7. Once cooked well, remove the chaap pieces from the stick and cut them. Put the cooked chaap in a mixing bowl and add onion, coriander leaves, 1 lemon juice, 1 green chilli, ½ tbsp red chilli powder, garam masala, chaat masala and 2 tbsp fresh cream. Drizzle 2 to 3 melted butter over it. Mix well.
  8. Serve this Tandoori Soya Chaap Tikka recipe with mint chutney!

  • Paneer - 500 gms, cubed
  • Capsicum - 2
  • Garlic Paste - 1 tsp
  • Mustard Oil - 2 tbsp
  • Kashmiri Red Chilli Powder - 1 tsp
  • Yoghurt (Curd) - 2 tbsp
  • Ginger Paste - 1 tsp
  • Garam Masala Powder - ½ tsp
  • Lemon Juice - 2 tbsp
  • Achari Masala - 2 tbsp

Instructions:

  1. To make this tikka recipe, take a bowl and add hung curd along with ginger garlic paste, garam masala, lemon juice, mustard oil, Kashmiri red chilli powder, achari masala and combine them well. Next, add paneer cubes and coat them properly in the marinade. Cover the bowl and keep it aside for 1 hour.
  2. Now, take wooden skewers to thread the marinated paneer and capsicum pieces in them gently.
  3. Heat a charcoal grill and apply little oil on the paneer tikka skewers. Grill the paneer skewers from both sides applying little oil till nicely charred and cooked.
